Easy Black Bean Soup

This is my favorite black bean soup recipe. I highly recommend it.

COMBINE THE FOLLOWING IN A LARGE SOUP POT, SIMMER FOR 10 MINUTES:

  • 2 onions, finely chopped
  • 4 cloves garlic, minced
  • 4 ribs celery, finely chopped
  • 1/2 red bell pepper, finely chopped
  • 4 small boullion cubes or 1 tbsp bouillion paste
  • 3 cups boiling water

ADD THESE, SIMMER FOR 5 MORE MINUTES:

  • 1 16oz can black beans
  • 1 tsp salt
  • 1 tsp cumin

BLEND THIS WITH AN IMMERSION BLENDER.

FINALLY, STIR IN:

  • 3 more 16oz cans of black beans
  • Juice of 1 lemon
  • 3 tbsp cornstarch whisked with 3 tbsp water
  • Pepper to taste

SIMMER FOR 5-10 MINUTES.


This is really tasty with diced avocado on top and some bread on the side. MMMMM.
