Veggie Reubens

Tonight I made meatless reubens and they were GOOD. A little messy, though.

On rye bread: thin layer of mashed avocado that I mixed with some salt, Mrs. Dash, and a little lemon juice

Layer of sour kraut

Layer of sauteed green bell pepper

Shredded motz piled on top

Cooked in a pan like a grilled cheese. Served with oven 'fries' and spicy mustard. SO GOOD.
