I tried this recipe from Ventures with Veggies for "Chickpea Lettuce Wraps" last night. I had spicy brown mustard instead of dijon, and cooked my own chickpeas instead of using canned (so they weren't quite as soft).
It was GOOOOD. I think it'd be fantastic with an apple diced into it. Was a great alternative to tuna or egg salad. We had it on wheat pita bread with some extra slices of cucumber and a little shredded motz.
Would eat again, A++++++
